His culinary expedition began with Kitchen LTO, which later evolved into Junction Craft Kitchen. There, Chef Joshua fearlessly foraged local and high-quality ingredients, fermenting them into pickles, hot sauces, and other tantalizing delights. His dedication to cultivating unique flavors led him to master the art of fermenting koji, a fungus grown on rice that serves as a versatile foundation for a plethora of delectable creations.
His culinary repertoire boasts dishes like the Warm Potato Salad, expertly combining Okinawa and russet potatoes fried to perfection, embellished with garlic and scallion mayo, soy pickled egg, smoked kimchi, and fermented onions.
