Ingredients

  • 3 tomatoes
  • 1 yellow capsicums
  • 2kg of raw shrimp with shells
  • 1 lemon
  • 2 bunch of chives
  • 2 avocados
  • 20g Wasabi paste
  • 100ml Olive Oil
  • 2 jalapenos
  • 1 lime
  • 500ml cooking oil
  • 1 pack dumpling wrappers
  • 1 bunch of fresh coriander/cilantro
  • 1 red thai chilli
  • 1 brown onion
  • 1 bottarga (grey mullet salted & cured fish roe pouch)

Instructions

  1. Step 1

    Step 1: Preparing the Prawns

    • Boil water and add half a lemon and half a brown onion for flavor.
    • Blanch the prawns in the fragrant water for approximately 4 minutes or until perfectly cooked.
    • Transfer the prawns to a refreshing ice bath to cool, then peel, clean, and finely shred them.

    Step 2: Creating the Avocado Lime Puree

    • Mash ripe avocados and combine them with zesty lime juice, a hint of wasabi, and a drizzle of olive oil. Blend until it forms a smooth, creamy puree. Set this aside.

    • Dice the remaining ingredients and gently fold them into the shredded prawns.
