Ingredients

  • 1 large Honeydew Melon
  • 10-15 thin slices of Jamon Iberico
  • 1 cup shelled Pistachios, roughly chopped
  • 1/2 cup Honey (preferably mild-flavored)
  • 1 small bunch of Fresh Mint (optional for garnish)
  • 1 packet of Sea Salt Flakes
  • 2 Jalapeños chillies green

Instructions

  1. Step 1

    Prepare the Melon:

    1. Cut the honeydew melon in half and remove the seeds.
    2. Using a melon baller, scoop out balls of honeydew melon. Aim for around 3-4 balls per person, approximately 30-40 melon balls in total.
    3. Marinate melon in olive oil.
  2. Step 2

    Prepare the Pistachio Honey:

    1. Roughly chop the shelled pistachios.
    2. In a small saucepan over low heat, combine the honey with the chopped pistachios.
    3. Add the lemon juice to the mixture and stir well.
    4. Warm the mixture gently for about 2-3 minutes, just until the honey is infused with the pistachio flavor. Do not let it boil.
    5. Remove from heat and let it cool slightly.
  3. Step 3

    Assemble the Dish:

    1. Drape a slice of Jamon Iberico over each melon ball.
    2. Drizzle the pistachio honey over the melon and Jamon Iberico.
    3. Garnish with fresh mint leaves and a sprinkle of flaky sea salt for an extra burst of flavor.
    4. For a hint of spice, thinly slice the jalapeños and scatter them over the dish.
