- 1 large Honeydew Melon
- 10-15 thin slices of Jamon Iberico
- 1 cup shelled Pistachios, roughly chopped
- 1/2 cup Honey (preferably mild-flavored)
- 1 small bunch of Fresh Mint (optional for garnish)
- 1 packet of Sea Salt Flakes
- 2 Jalapeños chillies green

Prepare the Melon:
- Cut the honeydew melon in half and remove the seeds.
- Using a melon baller, scoop out balls of honeydew melon. Aim for around 3-4 balls per person, approximately 30-40 melon balls in total.
- Marinate melon in olive oil.

Prepare the Pistachio Honey:
- Roughly chop the shelled pistachios.
- In a small saucepan over low heat, combine the honey with the chopped pistachios.
- Add the lemon juice to the mixture and stir well.
- Warm the mixture gently for about 2-3 minutes, just until the honey is infused with the pistachio flavor. Do not let it boil.
- Remove from heat and let it cool slightly.
