Ingredients

  • 1.8 pounds Cod Fillets
  • 2 oz Tequila
  • 4-5 Lebanese Cucumbers (approximately 1/2 cucumber per person)
  • 5 Limes
  • 2 medium-sized Shallots
  • 3-4 Jalapeños (adjust based on desired spice level)
  • 5 medium-sized Tomatoes
  • 1 large bunch Cilantro
  • 5-6 cloves Garlic
  • Salt, to taste
  • Black Pepper, to taste
  • 1/4 cup Olive Oil

Instructions

  1. Step 1

    Prepare the Cod:

    1. Cut the cod fillets into small, bite-sized pieces, approximately 1/2 inch in size.
    2. Place the cod pieces in a large glass or ceramic bowl.
    3. Slice the Lebanese cucumbers into bite-sized pieces, suitable for canapés.
  2. Step 2

    Marinate the Cod:

    1. Pour the lime juice, tequila, and olive oil over the cod pieces.
    2. Add the thinly sliced shallots, minced garlic, and finely chopped tomatoes to the bowl.
    3. Stir gently to combine, ensuring that the cod is evenly coated with the marinade.
    4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the cod to “cook” in the citrus juices. Stir occasionally to ensure thorough marination.
  3. Step 3

    Combine Ingredients:

    1. After marinating, drain off about half of the excess liquid from the bowl.
    2. Drizzle extra virgin olive oil over the marinated cod mixture.
    3. Season with salt and black pepper to taste.
    4. Gently toss all the ingredients together until well combined.
  4. Step 4

    Serve:

    1. To serve, place a spoonful of the cod tequila ceviche on top of each Lebanese cucumber slice.
    2. Garnish with fresh cilantro leaves for an added burst of flavor and visual appeal.
    3. Arrange the ceviche-topped cucumber slices on a platter and serve immediately as a delightful appetizer or light meal option. Enjoy the vibrant flavors and textures of this delicious ceviche dish!
