Ingredients

  • 2.5 to 3 lbs beef fillet steak
  • Salt and black pepper, to taste
  • 6 tbsp soy sauce
  • 3 tbsp mirin (sweet rice wine)
  • 3 tbsp sake
  • 3 tbsp rice vinegar
  • 3 cloves garlic, minced
  • 3 green onions, finely chopped
  • Sesame seeds
  • Fresh cilantro
  • 3 tbsp olive oil

Instructions

  1. Step 1

    Prepare the marinade: In a bowl, combine the soy sauce, mirin, sake, rice vinegar, minced garlic, and grated ginger. Mix well.

  2. Step 2

    Season the beef: Pat the beef dry with paper towels. Season generously with salt and black pepper on all sides.

  3. Step 3

    Sear the beef:

    • Heat the vegetable oil in a large skillet over high heat. Once the oil is hot, add the beef. Sear each side for about 1 minute until a nice crust forms, but the inside remains rare.
    • Remove the beef from the skillet and immediately place it into a cooling rack. This helps to keep the inside rare while the outside remains seared.
    • Pat the beef dry again.

    Slice and Serve:

    • Remove the beef from the marinade and slice it thinly against the grain.
    • Arrange the slices on a serving platter. Sprinkle with chopped green onions and sesame seeds. Garnish with fresh cilantro if desired.
