Ingredients
- 2.5 to 3 lbs beef fillet steak
- Salt and black pepper, to taste
- 6 tbsp soy sauce
- 3 tbsp mirin (sweet rice wine)
- 3 tbsp sake
- 3 tbsp rice vinegar
- 3 cloves garlic, minced
- 3 green onions, finely chopped
- Sesame seeds
- Fresh cilantro
- 3 tbsp olive oil
Instructions
-
Step 1
Prepare the marinade: In a bowl, combine the soy sauce, mirin, sake, rice vinegar, minced garlic, and grated ginger. Mix well.
-
Step 2
Season the beef: Pat the beef dry with paper towels. Season generously with salt and black pepper on all sides.
-
Step 3
Sear the beef:
- Heat the vegetable oil in a large skillet over high heat. Once the oil is hot, add the beef. Sear each side for about 1 minute until a nice crust forms, but the inside remains rare.
- Remove the beef from the skillet and immediately place it into a cooling rack. This helps to keep the inside rare while the outside remains seared.
- Pat the beef dry again.
-
Step 4
Slice and Serve:
- Remove the beef from the marinade and slice it thinly against the grain.
- Arrange the slices on a serving platter. Sprinkle with chopped green onions and sesame seeds. Garnish with fresh cilantro if desired.
