Born in Barcelona, Chef Pepe Moncayo honed his skills in prestigious Catalan kitchens, including Via Veneto and the renowned Michelin three-star Can Fabes under the legendary Santi Santamaria.

In 2010, he relocated to Singapore to assist in launching Santi’s restaurant at Marina Bay Sands before embarking on his culinary journey with BAM!, a concept where he masterfully combined Spanish flavors with Japanese techniques. In 2019, Chef Moncayo brought his expertise to Washington, D.C., establishing Cranes, a Spanish-Japanese tasting menu restaurant that quickly garnered a Michelin star.

His cooking style is a harmonious blend of Mediterranean boldness and the precision of Japanese traditions, creating dishes that evoke deep emotions.

Recently, he opened Arrels at the Arlo Hotel, where he celebrates his Spanish heritage with a focus on fire, rice, and personal flavors.
